Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the cottage cheese, eggs, shredded cheese, and chopped vegetables. Mix well and season with salt and pepper.
  • Grease a muffin tin with cooking spray or oil.
  • Pour the mixture evenly into the muffin tin compartments.

Cooking

  • Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
  • Allow to cool slightly before removing from the tin. Enjoy warm or store in the fridge for meal prep.
