For the chicken

  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil for searing

For the sauce and vegetables

  • 2 cups broccoli florets fresh or frozen
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup chicken broth use low-sodium for better control over saltiness
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper
  • 4 oz cream cheese softened
  • 2 cups shredded cheddar cheese for creamy texture

Preparation

  • Heat olive oil in a skillet over medium heat. Sear the chicken breasts until golden brown on each side for about 4-5 minutes. Remove from heat.
  • In the crockpot, layer the seared chicken breasts on the bottom. Sprinkle garlic powder, onion powder, salt, and black pepper over the chicken.
  • Add broccoli florets, cream of chicken soup, and chicken broth. Stir gently to combine.
  • Cut cream cheese into chunks and drop into the mixture. Top with shredded cheddar cheese.

Cooking

  • Cover and cook on low for 6-8 hours. When done, stir everything well before serving.

Notes

This dish can be served over rice or pasta. Garnish with fresh herbs such as parsley or chives, and serve with crispy breadsticks or a fresh side salad for balance.
