Ingredients
  

For the bars

  • 113 g melted unsalted butter
  • 113 g unsulfured molasses
  • 100 g packed light brown sugar
  • 50 g white granulated sugar
  • 1 large cold egg
  • 2 tsp ground cinnamon
  • 2 tsp ground ginger
  • ½ tsp ground allspice
  • ½ tsp fine sea salt
  • ¾ tsp baking soda
  • 190 g all-purpose flour (about 1½ cups)

For the glaze

  • 50 g powdered sugar
  • 1 tsp instant espresso powder
  • a small pinch salt
  • 2–3 tsp milk (any type)

Instructions
 

Preparation

  • Preheat the oven to 175°C (350°F) and prepare an 8×8-inch baking pan by greasing it lightly and lining it with parchment paper, leaving some overhang for easy removal.
  • In a large bowl, blend melted butter with molasses and both sugars until the mixture looks smooth and evenly combined.
  • Mix in the egg along with cinnamon, ginger, allspice, and salt until the batter becomes glossy and uniform.
  • Stir in baking soda, then gently fold in the flour until no dry streaks remain and a thick dough forms.
  • Press the dough evenly into the prepared pan, smoothing the surface as much as possible.

Baking

  • Bake until the surface is golden, slightly puffed, and just set, about 24–27 minutes.
  • Let the baked slab cool completely in the pan; it will settle slightly as it cools.

Glazing

  • For the glaze, whisk powdered sugar with espresso powder and salt, then add milk gradually until a thick but pourable consistency is reached.
  • Remove the cooled bars using the parchment, drizzle with the coffee glaze, and allow it to set before slicing into squares.

Notes

These bars can be stored in an airtight container for up to 3-4 days at room temperature or refrigerated for up to one week. For longer storage, they can be frozen for up to three months.
