Preparation

  • Heat oven to 350°F (175°C) and position rack in the center. Line a large baking tray with parchment paper.
  • In a mixing bowl, blend melted butter with most of the sugar until evenly combined. Mix in vanilla, optional coconut extract, and salt until smooth.
  • Add baking soda, then incorporate flour and shredded coconut. Stir gently until a thick, slightly crumbly dough forms.
  • Press the mixture onto the prepared tray, shaping it into a thin round (about 10 inches wide and less than ¼ inch thick). Smooth edges with fingers if needed.
  • Sprinkle the remaining sugar on top and lightly press it in.

Baking

  • Bake for about 18–20 minutes, or until the surface turns golden and the cookie feels set.
  • Allow it to cool completely on the baking sheet, then break into rustic pieces.

Notes
