Instructions
 

Preparation

  • In a bowl, mix the shredded coconut, sweetened condensed milk, and vanilla extract until combined.
  • Shape the mixture into small bite-sized balls and refrigerate for 30 minutes.
  • Melt the chocolate chips and coconut oil together in a microwave or double boiler until smooth.
  • Dip each coconut ball into the chocolate mixture and then roll in ground cinnamon.
  • Place on a baking sheet lined with parchment paper and let set in the refrigerator.

Notes

Coconut Cinnamon Bites can be stored in an airtight container in the refrigerator. They can also be frozen for up to three months.
