  • 1 clove Garlic (minced)
  • 1 tsp Anchovy paste (optional but traditional) Adds depth without overpowering.
  • 1 Egg yolk (optional) Can be replaced with pasteurized yolks or omitted for safety.
  • 1 tsp Dijon mustard
  • 2 tbsp Lemon juice
  • 1 tsp Worcestershire sauce
  • cup Olive oil Slowly drizzle while whisking to create the dressing.
  • To taste Salt & black pepper

Preparation of Dressing

  • In a medium bowl, whisk together garlic, anchovy paste, egg yolk (if using), Dijon mustard, lemon juice, and Worcestershire sauce.
  • Slowly drizzle in the olive oil while whisking continuously until creamy.
  • Stir in salt, pepper, and a bit of Parmesan for extra flavor.

Tossing the Salad

  • In a large salad bowl, add the chopped romaine lettuce.
  • Add croutons and Parmesan cheese.
  • Drizzle with the dressing and toss until everything is well coated.

Serving

  • Garnish with extra Parmesan and cracked black pepper. Optionally top with grilled chicken, shrimp, or a soft-boiled egg.
