Salad Base

  • 2 cups Kale, chopped Fresh and free from browning

Fruits

  • 1 cup Seasonal fruit (pomegranate, orange, apple) Choose according to availability and preference

Dressing and Toppings

  • 2 tablespoons Olive oil For massaging the kale
  • 2 tablespoons Lemon juice Freshly squeezed for best flavor
  • 1/4 cup Pepitas (pumpkin seeds) Adds crunch and protein
  • to taste Salt Enhances flavor
  • to taste Pepper Enhances flavor

Preparation

  • Massage the kale with olive oil, lemon juice, salt, and pepper until softened.
  • Chop the seasonal fruits and add to the massaged kale.
  • Toss the pepitas into the salad.

Notes
