Preparation

  • In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, combine buttermilk, egg, melted butter, and vanilla.
  • Pour wet ingredients into dry and mix until just combined.
  • In a small bowl, mix cinnamon and brown sugar.

Cooking

  • Heat a non-stick skillet over medium heat, pour in pancake batter, and sprinkle the cinnamon mixture on top.
  • Cook until bubbles form on the surface, then flip and cook until golden brown.
