Ingredients
  

Pancake Base

  • 1 cup Flour (Can use gluten-free flour blend.)
  • 2 teaspoons Baking Powder (Ensure freshness for best rise.)
  • 1/4 teaspoon Salt (Sea salt can be used for flavor.)
  • 1 cup Milk (Any non-dairy milk works well.)
  • 1 large Egg (A flax egg can substitute for vegan.)
  • 2 tablespoons Vegetable Oil (Melted butter can be used for flavor.)
  • 2 tablespoons Melted Butter Vegetable oil can be a substitute.

Cinnamon Filling

  • 1/4 cup Brown Sugar (Light or dark brown sugar can be used.)
  • 1 tablespoon Ground Cinnamon (Mix with nutmeg for extra warmth.)

Cream Cheese Glaze

  • 4 ounces Cream Cheese (Mascarpone can be a delightful alternative.)
  • 1 cup Powdered Sugar (Adjust for preferred sweetness.)
  • 1 teaspoon Vanilla Extract (Using pure vanilla enhances flavor.)
  • 2 tablespoons Melted Butter

Instructions
 

Preparation

  • In a mixing bowl, combine flour, baking powder, and salt.
  • In another bowl, whisk together milk, egg, vegetable oil, and melted butter.
  • Gradually add the wet ingredients to the dry ingredients until just combined.

Cinnamon Filling

  • For the cinnamon filling, mix the brown sugar, ground cinnamon, and melted butter until well blended. Set aside.

Cooking

  • Preheat a non-stick skillet over medium heat.
  • Pour 1/4 cup of pancake batter onto the skillet. Immediately squeeze or drizzle the cinnamon mixture in a spiral shape on top of the pancake batter.
  • Cook for 2-3 minutes, or until bubbles form and the edges begin to look set, then carefully flip and cook for an additional 2-3 minutes until golden brown.

Making the Glaze

  • For the cream cheese glaze, beat the cream cheese until smooth and creamy.
  • Gradually add powdered sugar, vanilla extract, and melted butter, mixing until smooth.

Serving

  • Serve warm pancakes with a generous drizzle of the cream cheese glaze over the top.

Notes

For an extra layer of flavor, consider adding nuts or chocolate chips to the pancake batter. Adjust the glaze with citrus zest or spices to suit your taste.
