Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
  • In a large bowl, mash the ripe bananas with a fork until smooth. Add the granulated sugar, melted butter, and egg, mixing well until combined.
  • In another bowl, whisk together the flour, baking soda, and 1 teaspoon of cinnamon. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  • Pour the banana bread batter into the prepared loaf pan, smoothing the top with a spatula.

Making the topping

  • In a separate bowl, make the crumb topping by combining 1/2 cup flour, brown sugar, 1 teaspoon cinnamon, and cold butter. Use your fingers to mix until crumbly.
  • Sprinkle the crumb topping evenly over the banana bread batter in the pan.

Baking

  • Bake in the preheated oven for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes
