These chocolate truffles have a smooth, creamy center and rich semisweet chocolate flavor, with a little tang from cream cheese to balance the sweetness. They’re made with just four main ingredients, then rolled in your choice of cocoa powder, chopped nuts, coconut, or other simple coatings.

- 1 8 oz package cream cheese, softened
- 3 cups confectioners' sugar sifted
- 3 cups semisweet chocolate chips melted
- 1½ teaspoons vanilla extract
Optional coatings:
- Ground nuts
- Unsweetened cocoa powder
- Shredded coconut
- Confectioners' sugar
- Candy sprinkles
Beat the softened cream cheese in a large bowl until smooth and creamy.
Gradually beat in the sifted confectioners’ sugar until well combined.
Stir in the melted chocolate and vanilla until completely smooth with no streaks.
Refrigerate for 15–30 minutes, or until just firm enough to shape.
Shape into 1-inch balls.
Roll in your chosen optional coatings.
Refrigerate until firm, then serve. Store leftovers in the refrigerator.
