Ingredients
  

For the cake

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the frosting

  • 1 cup creamy peanut butter
  • 3 cups powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup heavy cream

For the caramel

  • 1 cup granulated sugar (for caramel)
  • 1/4 cup water
  • 1/2 cup peanuts, chopped

For the ganache

  • 12 ounces milk chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  • In a large bowl, combine flour, sugar, cocoa, baking powder, baking soda, and salt.
  • Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes.
  • Stir in boiling water (batter will be thin). Pour evenly into the prepared pans.

Baking

  • Bake for 30-35 minutes or until a toothpick comes out clean. Once done, let cool completely.

Frosting and Assembly

  • For the peanut butter frosting, beat peanut butter, softened butter, and powdered sugar until smooth. Add milk if needed for thinning.
  • For the caramel, combine sugar and water in a saucepan. Cook until golden brown, then add chopped peanuts and stir. Let cool.
  • Assemble the cake by layering the chocolate cake with the peanut butter frosting and peanut caramel in between. Cover the top and sides with the remaining frosting.

Ganache

  • To make the ganache, heat heavy cream until simmering, then pour over the milk chocolate chips. Stir until smooth. Pour over the assembled cake.
  • Let set, slice, and serve.

Notes

For best results, ensure all ingredients are at room temperature before beginning. Adjust sweetness to taste.
