Ingredients
  

For the Cookie Dough

  • 113 g unsalted butter, melted
  • 150 g white sugar
  • 1 large chilled egg
  • 1 tbsp neutral-flavored oil
  • 1 tsp vanilla extract
  • 0.5 tsp fine sea salt
  • 45 g Dutch-process cocoa powder, sifted if needed
  • 0.5 tsp baking powder
  • 112 g all-purpose flour
  • 128 g peanut butter baking chips
  • Flaky sea salt, for topping

Instructions
 

Preparation

  • Heat the oven to 350°F (175°C). Prepare two baking trays with parchment paper and place the racks near the center of the oven.
  • In a large mixing bowl, whisk the melted butter with the sugar until fully blended.
  • Add the cold egg, oil, vanilla, and fine salt. Whisk until the mixture becomes smooth and glossy.
  • Stir in the cocoa powder, then mix in the baking powder.
  • Fold in the flour and peanut butter chips until the dough is evenly combined with no dry spots remaining.

Baking

  • Scoop the dough into 18 portions and arrange them evenly on the baking sheets.
  • Finish with a light sprinkle of flaky sea salt.
  • Bake for 9–11 minutes, rotating the pans halfway through, until the tops develop small cracks while the centers stay soft and fudgy.
  • Allow the cookies to cool directly on the baking trays before serving.

Notes

For the best results, use high-quality cocoa powder and do not overmix after adding the flour. The cookies can be served warm, paired with milk or ice cream.
