Chocolate Peanut Butter Balls

- 2 cups crunchy peanut butter no-stir
- ½ cup unsalted butter softened
- 2 cups powdered sugar
- 3 cups Rice Krispies cereal
- 2 cups semisweet chocolate chips
- 2 teaspoons canola oil or coconut oil
Line a baking sheet with parchment paper.
Stir together the peanut butter, softened butter, powdered sugar, and Rice Krispies in a large bowl until well combined.
Roll into 1-inch balls. If sticky, continue rolling until they hold together; lightly coat your hands with nonstick cooking spray if needed.
Place the balls on the prepared baking sheet.
Combine the chocolate chips and oil in a microwave-safe bowl. Microwave for 60 seconds, then stir until smooth. If needed, microwave for an additional 30 seconds and stir again.
Dip the balls one at a time, using a fork to roll them gently in the chocolate.
Lift each ball, let excess chocolate drip off, and return it to the parchment.
Drizzle with any remaining melted chocolate, if desired.
Let the coating set completely before serving or storing.
