Ingredients
  

Cookie Dough Base

  • 225 g unsalted butter, softened to room temperature Ensure butter is at room temperature for optimal mixing.
  • 150 g light brown sugar
  • 75 g granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 270 g plain (all-purpose) flour
  • 1 teaspoon bicarbonate of soda (baking soda)
  • 1 teaspoon salt
  • 400 g milk or dark chocolate chips, divided 350g for the dough, 50g for topping.
  • a light sprinkle of sea salt, optional Adds flavor when sprinkled on top.

Instructions
 

Preparation

  • Heat the oven to 180°C (160°C fan) / 350°F / Gas mark 4. Line a 20 x 25cm (8 x 10in) baking tin with nonstick baking paper.
  • In a large bowl, beat the softened butter with the brown sugar and granulated sugar until pale and fluffy.
  • Add the eggs and vanilla, mixing just until combined.
  • Add the flour, bicarbonate of soda, and salt. Stir gently until nearly fully mixed, then fold in 350g of the chocolate chips.
  • Transfer the dough to the lined tin, spreading it evenly into the corners. Scatter and lightly press remaining chocolate chips on top.

Baking

  • Bake for 20-25 minutes until the top and edges are golden, and the center still has a slight wobble.
  • While still warm, sprinkle with sea salt if using. Let cool fully in the tin before slicing into 16 bars.

Notes

For best texture, enjoy the bars the same day or the next day. Store leftovers in an airtight container at room temperature or refrigerator for up to 5 days.
