  • ¼ cup mayonnaise Use regular or low-fat mayonnaise.
  • 2-3 pieces chipotle peppers in adobo sauce, diced Adjust for heat preference.
  • 2 cloves garlic, minced or roasted Roasted garlic for sweetness; raw for punch.
  • 1 tbsp fresh lime juice
  • ½ tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp salt, or to taste
  • 1 tbsp olive oil, optional For adjusting consistency.

Preparation and Blending

  • Prep the garlic and chipotles by mincing the garlic and dicing the chipotle peppers.
  • Blend all ingredients in a mixing bowl or food processor until smooth.
  • Taste and adjust seasoning as needed.
  • If the sauce is too thick, add olive oil until desired texture is achieved.

Chilling

  • Transfer the blended sauce into a container and chill in the refrigerator for at least 30 minutes before serving.

Notes

This sauce complements various cuisines, making it a versatile condiment. For an extra kick, add more chipotle peppers or cayenne pepper. For milder flavor, reduce chipotle or remove seeds. Serve at room temperature for best taste.
