For the Marinade

  • 3 whole Juice of 3 lemons Freshly squeezed for best flavor
  • 1/4 cup Honey Plus 1 tablespoon
  • 1/4 cup Soy sauce Plus 1 tablespoon
  • 5 cloves Garlic Minced
  • 1/2 bunch Cilantro For the marinade
  • Pulp of lemons Pulp of the lemons

For the Chicken

  • 8 pieces Chicken thighs
  • 1/2 bunch Cilantro To finish the dish

Instructions
 

Marinade Preparation

  • Mix together the lemon juice, honey, soy sauce, and minced garlic.
  • Add the lemon pulp and 1/2 bunch cilantro; stir to combine.
  • Add the chicken thighs to a baking dish and coat with the mixture.
  • Refrigerate for 1 night.

Cooking the Chicken

  • Preheat your oven to 475°F (240°C).
  • Bake the chicken for 15 minutes.
  • Turn the chicken over, then repeat the 15-minute bake and turn cycle 3 times total.
  • Finish with the remaining 1/2 bunch cilantro before serving.

Notes

For extra flavor, consider basting the chicken with the marinade during baking. Optionally, broil for a few minutes for added crispiness.
