  • 3 cups cooked chicken (shredded or diced, rotisserie works well)
  • 4 large flour tortillas (burrito size, 10-12 inch)
  • 3 cups romaine lettuce (chopped)
  • 1/2 cup creamy Caesar dressing (plus more if desired)
  • 1/2 cup Parmesan cheese (freshly shredded or shaved)
  • 1/3 cup croutons (coarsely crushed)
  • Freshly ground black pepper (to taste)

Preparation

  • In a large bowl, combine the cooked chicken, chopped romaine lettuce, crushed croutons, and shredded Parmesan cheese.
  • Pour the Caesar dressing over the ingredients and toss gently until everything is lightly and evenly coated. Season with black pepper to taste.
  • Warm the tortillas in a dry skillet over medium heat for 15-20 seconds per side or in the microwave for about 20 seconds.

Assembly

  • Lay one warm tortilla on a flat surface. Spoon about one-fourth of the chicken Caesar mixture onto the center of the tortilla.
  • Fold in the sides of the tortilla, then tightly roll it up from the bottom. Slice in half and serve immediately.

Notes

These wraps can be served with extra Caesar dressing for dipping and pair well with sweet potato fries or a light salad. Store leftovers in plastic wrap or an airtight container in the refrigerator for up to two days. Assemble just before serving to maintain freshness.
