  • ½ teaspoon baking soda
  • 2 cups quick oats

Preparation

  • Preheat the oven to 350°F (175°C) and prepare two baking trays with parchment paper.
  • In a large mixing bowl, whisk together the brown sugar, peanut butter, and melted butter until creamy.
  • Add the chilled egg, vanilla, and salt; whisk until smooth and glossy.
  • Stir in the cornstarch and baking soda, then fold in the oats, chocolate chips, and candy-coated chocolates until evenly combined.

Baking

  • Scoop portions of dough using about 1½ tablespoons each and shape into compact balls.
  • Arrange 12 cookies per baking sheet, ensuring adequate space between them.
  • Bake for 12–14 minutes, rotating the pans halfway through until cookies are lightly golden and set around the edges.
  • Allow the cookies to cool completely on the baking trays before serving or storing.

Notes

For best results, use high-quality chocolate chips and adjust baking time according to your oven. Store cookies in an airtight container.
