Ingredients
  

For the Brownies

  • 142 g unsalted butter, cut into pieces Kept cold
  • 225 g white granulated sugar About 1 cup + 2 tbsp
  • 48 g neutral-flavored oil About 1/4 cup
  • 1 tsp vanilla extract
  • 0.5 tsp fine sea salt
  • 2 large eggs, chilled
  • 0.25 tsp baking soda
  • 60 g Dutch-process cocoa powder About 1/2 cup, sifted if needed
  • 64 g all-purpose flour About 1/2 cup
  • 85 g chopped chocolate or chocolate chips About 1/2 cup

Preparation

  • Heat oven to 175°C (350°F). Prepare an 8x8-inch pan by greasing it and lining it with parchment paper.
  • Melt butter in a light-colored pan over medium heat, then continue cooking while stirring until it turns golden brown and smells nutty.
  • Mix hot browned butter with sugar in a large bowl and whisk vigorously for under a minute to start dissolving it.
  • Add oil, vanilla, and salt, then whisk until smooth. Incorporate the eggs and mix until fully combined.
  • Stir in baking soda and cocoa powder until evenly blended.
  • Gently fold in flour and chocolate pieces just until no dry streaks remain.
  • Pour batter into the prepared pan and level the surface.

Baking

  • Bake for about 25-30 minutes, until set around the edges but still slightly soft in the center.
  • Allow to cool completely before lifting out using the parchment and slicing into squares.

Notes

You can customize these brownies by adding nuts, caramel swirls, or adjusting sweetness to taste. They pair beautifully with ice cream or whipped cream.
