Preparation

  • Rinse the long grain white rice under cold water until the water runs clear to remove excess starch.
  • In a large skillet, melt the unsalted butter over medium heat and sauté the chopped onion until translucent.
  • Stir in the rinsed rice and toast for a couple of minutes.
  • Pour in the chicken broth and bring the mixture to a boil.
  • Reduce the heat and let it simmer until the rice absorbs most of the liquid, about 15 minutes.
  • Add whole milk to the mixture and stir, or use heavy cream for a richer flavor.
  • Season with paprika, salt, and pepper, mixing well.
  • Remove from heat and fold in the sharp cheddar cheese until fully melted and combined.

Notes

Serve with grilled chicken, roasted vegetables, or a fresh salad. Can be customized with different cheeses or proteins.
