Ingredients
  

For the filling

  • 1 tablespoon butter
  • 2 teaspoons olive oil
  • 100 g baby or new potatoes, cut into very thin rounds Ensure they are sliced very thin for quick cooking.
  • 2 slices hearty crusty bread, such as sourdough
  • 2 to 3 slices Monterey Jack cheese Can substitute with other cheeses as desired.
  • 1 to 2 tablespoons chutney, any variety Sweet or tangy chutney enhances the flavor.

Preparation

  • Heat the butter and olive oil in a nonstick skillet over medium-low heat.
  • Add the potato slices in a single layer and cook for about 10 minutes, turning once, until soft and lightly golden.

Building the Sandwich

  • Warm a grill pan over medium heat.
  • Place one slice of bread on a sheet of baking parchment.
  • Cover the bread evenly with the cooked potatoes, then add the cheese and spread the chutney over the top.
  • Close the sandwich with the second slice of bread.
  • Wrap it in the parchment and ensure the excess paper does not touch the pan.

Cooking

  • Put the wrapped sandwich on the grill pan and press it down with a heavy pan or similar weight.
  • Cook for around 4 minutes per side, until the bread is crisp and marked and the cheese has melted.

Serving

  • Cut in half and serve warm.

Notes

For the best experience, consider using different cheeses, adding spices to the potatoes, or serving with complementary sides like pickles or soup.
