Preparation

  • Heat the olive oil or butter in a large skillet over medium heat.
  • Add the diced potatoes and cook until crispy and golden brown, about 10-15 minutes.

Cooking

  • In a bowl, whisk together the eggs, salt, and pepper.
  • Push the potatoes to one side of the pan and pour the eggs into the other side. Scramble the eggs gently until cooked.
  • Stir in the cheese and optional ham or bacon. Cook until the cheese is melted.

Notes
