  • 6 large eggs
  • 1 cup shredded cheese Cheddar or your choice.
  • 1/2 cup chopped vegetables Such as bell peppers, spinach, or onions.
  • Salt and pepper To taste.
  • Cooking spray or oil For greasing the muffin tin.

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, whisk together the cottage cheese and eggs until well combined.
  • Stir in the shredded cheese, chopped vegetables, salt, and pepper.
  • Grease a muffin tin with cooking spray or oil.
  • Pour the egg mixture into the muffin tin, filling each cup about 3/4 full.

Baking

  • Bake for 18-20 minutes, or until the egg bites are set and lightly golden.
  • Allow to cool slightly before removing from the tin.

Notes

These egg bites can be served warm or cold and are perfect for meal prep. Freeze leftovers to last up to three months.
