  • 2 cups cooked chicken, shredded Can use leftover or rotisserie chicken.
  • 1 cup shredded cheese (cheddar or mozzarella) Choose for the best texture.
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Optional Toppings

  • sour cream
  • salsa
  • avocado

Preparation

  • In a large bowl, mix the shredded chicken, cheese, garlic powder, onion powder, salt, and pepper until well combined.
  • Heat olive oil in a skillet over medium heat.
  • Take a low carb tortilla or lettuce leaf and spoon some of the chicken mixture onto it.
  • Wrap it up tightly.
  • Place the wrapped tortilla seam-side down into the skillet and cook for 2-3 minutes on each side until golden and crispy.
  • Serve with optional toppings if desired.

Notes

For the best results, use a non-stick skillet and don’t rush the cooking process. Experiment with different cheeses and add spices for variation.
