Ingredients
  

Crust

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted

Cheesecake Filling

  • 2 packages cream cheese, softened (8 ounces each)
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups apples, peeled and chopped
  • 1/2 cup caramel sauce
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking dish.
  • In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter; mix well until crumbly and press into the bottom of the prepared baking dish.
  • In another bowl, beat together the cream cheese, 1 cup sugar, and vanilla until smooth.
  • Add eggs, one at a time, mixing well after each addition.
  • Fold in the apples, cinnamon, and nutmeg.
  • Pour the cheesecake mixture over the crust and spread evenly.
  • Drizzle caramel sauce over the top and use a knife to create swirls.

Baking

  • Bake in the preheated oven for about 35-40 minutes, or until set.
  • Cool completely, then refrigerate for at least 2 hours before cutting into bars.

Notes

For serving, cut into squares and serve chilled. You can warm the bars slightly in the microwave and drizzle with additional caramel just before serving.
