For the Candied Pecans

  • 1 3/4 cups granulated sugar
  • 1/2 cup boiling water
  • 1/4 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon cream of tartar Helps prevent crystallization and keeps the coating smooth.
  • 1 pound pecans Can use walnuts or almonds as alternatives.
  • 1 teaspoon vanilla extract

Preparation and Cooking

  • In a medium saucepan, combine the granulated sugar, boiling water, brown sugar, cinnamon, nutmeg, and cream of tartar.
  • Cook over medium heat, stirring constantly, until the mixture comes to a boil.
  • Continue cooking at a gentle boil for about 10 minutes, stirring constantly, until slightly thickened.
  • Remove the saucepan from the heat and stir in the pecans, then add the vanilla extract.
  • Stir until the pecans are fully coated with the sugar mixture.
  • Line a baking sheet with parchment paper and spread the pecans out in a single layer.
  • Use a fork to separate the nuts and let them cool for 10–20 minutes until set.
  • Transfer to a serving bowl or storage container and enjoy.

Notes

Stir constantly while boiling to prevent burning. Separate the pecans while they’re still warm for best results. Add a pinch of cayenne for a sweet-and-spicy variation. Can be made several days in advance. Store in an airtight container at room temperature for up to 2 weeks.
