  • 12 oz pasta (penne or rotini)
  • 1 lb Cajun sausage (sliced)
  • 1 onion (chopped)
  • 1 bell pepper (chopped)
  • 3 cloves garlic (minced)
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup heavy cream
  • 1 cup shredded cheese (like cheddar or mozzarella)
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • Olive oil for cooking
  • Chopped parsley for garnish

Cooking

  • In a large pot, heat olive oil over medium heat. Add the sliced sausage and cook until browned.
  • Add the chopped onion, bell pepper, and minced garlic, and cook until softened.
  • Stir in the diced tomatoes and Cajun seasoning.
  • Add the pasta and enough water to cover the pasta. Bring to a boil, then reduce heat and simmer, covered, until the pasta is cooked.
  • Stir in the heavy cream and cheese until melted and combined.
  • Season with salt and pepper to taste.
  • Garnish with chopped parsley before serving.

Notes

Serve it hot, excellent on its own or with a side salad or garlic bread. For extra flavor, consider using different types of Cajun sausage or adding shrimp. Adjust spiciness by using more Cajun seasoning or hot sauce. Watch the pasta closely while cooking to avoid mushiness.
