  • 4 pieces lobster tails (shells cut lengthwise) Select fresh lobster tails with no discoloration.
  • 1 cup unsalted butter (cut into cubes) Use unsalted for better control of seasoning.
  • 2 cloves garlic (lightly crushed)
  • 2 sprigs fresh thyme Adjust herbs to taste.
  • 1 sprig fresh rosemary (optional)
  • 1 tablespoon lemon juice (fresh) To enhance flavor before serving.
  • salt (to taste)
  • black pepper (to taste)

Instructions
 

Preparation

  • Use kitchen shears to cut the lobster shells down the center and gently loosen the meat.
  • In a saucepan over very low heat, add butter and allow it to melt slowly without bubbling.

Cooking

  • Add garlic, thyme, and rosemary to the melted butter and let infuse for 2–3 minutes.
  • Submerge lobster tails in the butter, ensuring they are fully covered. Poach gently for 8–10 minutes until opaque and tender.
  • Remove lobster tails with a slotted spoon. Season with salt, black pepper, and lemon juice.
  • Serve immediately with extra butter sauce spooned over the top.

Notes

For best results, store leftovers in an airtight container with the butter sauce for up to two days. Gently warm when reheating.
