Main Ingredients

  • 4 cups broccoli florets, chopped Steamed or boiled until tender
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour or almond meal For gluten-free option, use almond meal
  • 2 large eggs, beaten
  • 1/2 medium onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for frying

Preparation

  • Steam or boil broccoli florets until tender. Drain and chop finely.
  • In a large bowl, combine chopped broccoli, cheddar cheese, Parmesan cheese, flour, beaten eggs, onion, garlic, salt, and pepper. Mix well.
  • Scoop a small amount of the mixture and shape into patties.
  • Preheat oven to 375°F (190°C). Place patties on a parchment-lined baking sheet.
  • Bake for 15-20 minutes, flipping halfway through.

Notes

For added flavor, experiment with different herbs and spices. Serve with marinara sauce or tangy yogurt dip. Can be frozen uncooked and baked later.
