  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk or cream
  • Salt and pepper to taste

Preparation

  • In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
  • Add diced potatoes and broccoli florets to the pot, stirring for a few minutes.
  • Pour in vegetable broth and bring to a boil. Reduce heat and let it simmer until the vegetables are tender, about 15-20 minutes.
  • Using an immersion blender or a regular blender, puree the soup until smooth.
  • Stir in milk or cream, and add salt and pepper to taste.
  • Serve hot, and optionally top with grated cheese.

Notes

For best results, use fresh broccoli and homemade vegetable broth if possible. Consider adding spices like nutmeg or cayenne for extra flavor. Letting the soup sit for a bit before serving allows the flavors to meld better.
