  • 2 cups broccoli florets Fresh preferred
  • 2 medium potatoes, peeled and diced
  • 1 cup shredded cheese (cheddar or mozzarella) Can mix different types of cheese
  • 1/2 cup breadcrumbs Adjust as necessary for consistency
  • 2 large eggs
  • 1 teaspoon garlic powder
  • to taste Salt
  • to taste Pepper
  • as needed for frying Oil Vegetable or olive oil works well

Instructions
 

Preparation

  • Steam the broccoli florets until tender, then finely chop.
  • Boil the diced potatoes until soft, then mash them.
  • In a bowl, combine the chopped broccoli, mashed potatoes, cheese, breadcrumbs, eggs, garlic powder, salt, and pepper. Mix until well combined.
  • Form the mixture into small patties.

Cooking

  • Heat oil in a frying pan over medium heat.
  • Fry the patties until golden and crispy on both sides.
  • Remove from the pan and place on paper towels to drain excess oil.
  • Serve warm.

Notes

These fritters can be served with a fresh salad or dipping sauces like sour cream or yogurt. For storage, keep in an airtight container in the refrigerator for 3-4 days or freeze for 2-3 months.
