For the Marinade

  • 1/2 cup bourbon Choose a good quality bourbon for the marinade.
  • 1/3 cup peach preserves Use natural preserves for best flavor.
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Salmon

  • 4 filets salmon Choose high-quality, fresh salmon.
  • 2 fresh peaches, sliced Fresh peaches recommended for garnish.

Preparation

  • In a bowl, mix together bourbon, peach preserves, olive oil, minced garlic, salt, and black pepper to create the marinade.
  • Marinate the salmon filets in the bourbon peach mixture for at least 30 minutes.

Cooking

  • Preheat the oven to 400°F (200°C).
  • Line a baking sheet with parchment paper and place the marinated salmon filets on the sheet.
  • Slice fresh peaches and arrange them around the salmon.
  • Pour any remaining marinade over the salmon and peaches.
  • Roast in the oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Serve the salmon with the softened peaches and the caramelized glaze.

Notes

For best results, use sustainably sourced salmon and consider letting the salmon marinate longer for more intense flavor. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
