  • 300 g speculoos spread or cookie butter High-quality spread recommended.
  • 85 g all-purpose flour Can substitute with gluten-free flour blend.
  • 1 large egg

Preparation

  • Preheat the oven to 200°C (180°C fan) / 400°F / Gas, 6.
  • In a medium bowl, combine the cookie butter, flour, and egg, then stir until a soft dough forms.
  • Split the dough into 6 equal portions and shape each one into a ball.
  • Arrange the dough balls on a nonstick baking sheet with about 10 cm (4 in) spacing between them.

Baking

  • Bake for 10 minutes, or until the edges are set and the tops show light cracks.
  • Let the cookies rest on the baking sheet for at least 10 minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container to prevent drying. They can be frozen for up to three months. For a special touch, dust with powdered sugar before serving or make cookie sandwiches with whipped cream.
