  • 250 g smooth peanut butter Use natural peanut butter for best flavor.
  • 200 g white sugar Plus a little extra for topping.
  • 1 large egg Room temperature preferred.

Preparation

  • Preheat the oven to 180°C (160°C fan) / 350°F / Gas, 4.
  • In a large bowl, add the peanut butter, sugar, and egg.
  • Whisk until the mixture is fully smooth.
  • Take about 2 tablespoons of dough at a time and shape into balls.
  • Place them on a nonstick baking tray, leaving about 7.5 cm (3 inches) between each one.
  • Gently press each ball with the back of a fork to create a criss-cross design.

Baking

  • Bake for 8–9 minutes, until the cookies are lightly golden and look set around the edges.
  • Scatter a little extra sugar over the top and let the cookies rest on the tray for 10 minutes.
  • Move them to a wire rack and allow them to cool completely.

Notes

These cookies can be enjoyed on their own or paired with milk or ice cream. They can also be used as sandwich cookies with creamy fillings.
