Ingredients
  

Main Ingredients

  • 125 g plain flour
  • 100 g caster sugar
  • 25 g cocoa powder
  • 2 tsp baking powder
  • ½ tsp salt
  • 60 g unsalted butter, melted then cooled
  • 175 ml milk

For the Sauce

  • 80 g caster sugar
  • 100 g light brown sugar
  • 20 g cocoa powder
  • 300 ml freshly boiled water

Instructions
 

Preparation

  • Heat the oven to 180°C (160°C fan) / 350°F / Gas, 4. Butter a deep 28 x 18cm (11 x 7in) baking dish.
  • In a large bowl, combine the flour, caster sugar, cocoa powder, baking powder, and salt.
  • Add the cooled melted butter and milk, then stir until you have a smooth batter.
  • Spread the batter evenly into the prepared dish.

Sauce Layer

  • Mix the caster sugar, brown sugar, and cocoa powder in a separate bowl.
  • Scatter this sugar mixture evenly over the batter.
  • Gently pour the boiling water over the top. Do not stir.

Baking

  • Bake for about 35 minutes, until the surface looks set with a slightly crisp, cracked top.
  • Let it rest for a few minutes before serving.

Notes

Serve warm, optionally with vanilla ice cream or whipped cream. You can add a sprinkle of cocoa or powdered sugar for presentation.
