Main Ingredients

  • 1 pound ground beef Can substitute with ground turkey for lower fat.
  • 3 cups diced potatoes
  • 1 cup sliced carrots
  • 1 cup cut green beans
  • 1 cup corn kernels
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups beef broth Can substitute with chicken or vegetable broth.
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions
 

Preparation

  • In a large soup pot, brown the ground beef over medium heat until fully cooked. Drain excess grease.
  • Add diced onion and garlic. Sauté for 2–3 minutes until fragrant and translucent.

Cooking

  • Stir in potatoes, carrots, green beans, corn, diced tomatoes, and tomato sauce. Mix well.
  • Pour in beef broth. Season with salt, pepper, and Italian seasoning. Stir to combine.
  • Bring to a boil, then reduce heat. Cover and simmer for 25–30 minutes, until vegetables are tender.
  • Taste and adjust seasoning if needed.
  • Serve hot with bread or cheese on top if desired.

Notes

Garnish with freshly grated cheese or sour cream if desired. Serve with crusty bread or a simple salad.
