Ingredients
  

For the cookie dough

  • 115 g unsalted butter, softened to room temperature
  • 115 g full-fat cream cheese Using flavored cream cheese like strawberry or lemon can enhance flavor.
  • 200 g white granulated sugar
  • 120 g all-purpose flour Can substitute with a gluten-free flour blend.
  • 10 pieces cookies-and-cream sandwich biscuits, roughly chopped

Preparation

  • Preheat the oven to 180°C (160°C fan) / 350°F / Gas 4.
  • In a large bowl, beat the softened butter with the cream cheese until the mixture is smooth and creamy.
  • Add the sugar and mix until well blended.
  • Gently stir in the flour until a soft dough forms.
  • Fold in the biscuit pieces so they are spread evenly through the dough.
  • Cover the bowl and chill in the fridge for 1 hour.
  • Divide the dough into 12 portions, using about 2 tablespoons for each cookie, and place them on a non-stick baking tray with about 10 cm / 4 in between each one.
  • Bake for about 10 minutes, or until the edges turn lightly golden.
  • Let the cookies rest on the tray for 15 minutes, then move them to a wire rack and allow them to cool fully.

Notes

For a touch of elegance, dust cookies with powdered sugar when serving. They pair well with fresh fruit or vanilla ice cream.
