  • 110 g unsalted butter, melted and allowed to cool slightly Essential for achieving the chewy texture.
  • 150 g light brown sugar
  • 115 g granulated sugar
  • 1 large egg Adds moisture and flavor.
  • 1 teaspoon vanilla extract
  • 180 g plain flour Fold gently to avoid tough cookies.
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 200 g chocolate chips of your choice (milk, dark, or white) Customize based on your preference.

Instructions
 

Preparation

  • Preheat the oven to 180°C (160°C fan) / 350°F / Gas 4.
  • In a large bowl, whisk the melted butter with both sugars until you get a smooth, thick mixture that starts to pull slightly from the sides of the bowl.
  • Mix in the egg and vanilla until fully blended and glossy.
  • Add the flour, baking soda, and salt, then fold gently until the dough is almost combined.
  • Stir in the chocolate chips and mix just until no dry streaks remain.
  • Cover the bowl and chill the dough in the fridge for at least 30 minutes.

Baking

  • Scoop roughly 1 tablespoon of dough per cookie onto a large nonstick baking tray, leaving about 10cm between each one.
  • Bake in batches, about 6 cookies at a time, for 8-10 minutes, until the edges are golden and set.
  • Leave the cookies on the tray for about 20 minutes, then move them to a wire rack to cool fully.

Notes

Serve warm with milk or coffee. Sprinkle with sea salt for added flavor. Store in an airtight container to maintain chewiness. Freeze for long-term storage.
