Ingredients
  

For the Bars

  • 260 g self-raising flour
  • 200 g caster sugar Plus 2 extra tablespoons for topping
  • 3 large apples, peeled, cored, and cut into small cubes Granny Smith, Honeycrisp, or Fuji apples recommended
  • 130 g unsalted butter, melted and allowed to cool slightly
  • 1 large egg

Instructions
 

Preparation

  • Preheat the oven to 180°C (160°C fan) / 350°F / Gas mark 4. Line a 20 cm square baking tin with baking paper.
  • In a large bowl, combine the self-raising flour with 200 g of caster sugar. Add the chopped apples and mix well so the fruit is evenly coated.
  • Pour in the melted butter and crack in the egg. Stir until everything comes together into a thick, even mixture.
  • Transfer the batter to the lined tin and smooth the surface evenly. Scatter the remaining 2 tablespoons of sugar over the top.

Baking

  • Bake in the preheated oven for 40-45 minutes, or until the top is golden and a skewer inserted in the center comes out clean.
  • Let the bake cool fully in the tin, then slice into 16 bars.

Notes

Store the bars in an airtight container at room temperature for up to 4 days. They can also be stored in the fridge or frozen for up to three months. For best results, allow butter to cool before adding to the mixture and check for doneness a few minutes early to prevent overbaking.
