  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter Plus more for cooking
  • 1 teaspoon vanilla extract Optional

Preparation

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate smaller bowl, whisk together the milk and egg. Slowly pour in the melted butter and vanilla extract.
  • Pour the wet mixture into the dry ingredients and gently fold until just combined. Do not overmix; a few lumps are okay. Let the batter rest for 5-10 minutes.

Cooking

  • Preheat a large skillet or griddle over medium heat. Lightly grease with butter.
  • Pour about 1/4 cup of batter onto the hot griddle for each pancake. Cook until bubbles form and pop on the surface and the edges look set.
  • Flip carefully with a wide spatula and cook for another minute until golden brown.
  • Serve immediately with your favorite toppings.

Notes

For best results, ensure your baking powder is fresh and adjust the heating temperature to avoid burning.
