Ingredients
  

For the BBQ Chicken

  • 2 pieces boneless chicken breasts, cut into chunks
  • 2 tbsp olive oil
  • 2 tbsp BBQ sauce Customize the taste with your favorite brand.
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • ½ tsp salt
  • ½ tsp black pepper

For the Mango Salsa

  • 1 ripe mango, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup red bell pepper, diced
  • 1 tbsp fresh cilantro, chopped
  • 1 tbsp lime juice
  • pinch salt

For Assembly

  • 2 cups cooked jasmine rice Prepare warm for serving.
  • 1 piece avocado, sliced Add fresh to avoid browning.
  • 2 tbsp chopped parsley or cilantro
  • 3 tbsp mayonnaise
  • 1 tbsp sriracha
  • 1 tsp lime juice

Instructions
 

Preparation

  • Toss chicken chunks with olive oil, BBQ sauce, paprika, garlic powder, chili powder, salt, and pepper until coated.
  • Heat a skillet over medium-high heat. Cook chicken for 6-8 minutes, turning occasionally until caramelized and cooked through.
  • In a bowl, mix diced mango, red onion, bell pepper, cilantro, lime juice, and salt. Toss gently.
  • Whisk mayonnaise, sriracha, and lime juice until smooth and creamy.

Assembly

  • Add warm jasmine rice to the bowl as the base.
  • Arrange BBQ chicken, mango salsa, and sliced avocado on top.
  • Drizzle with spicy cream sauce and sprinkle herbs over everything.

Notes

Store leftovers separately in airtight containers. Best eaten fresh but can last in the fridge for up to three days.
