Sauce and Seasoning

  • 2 tbsp mayonnaise Combined with sriracha for the drizzle.
  • 1 tbsp sriracha sauce Adjust based on spice preference.
  • 2 tbsp soy sauce
  • 1 tbsp olive oil Used for cooking the chicken.
  • to taste Salt and pepper

Preparation

  • Cook jasmine rice according to package instructions.

Cooking

  • In a skillet, heat olive oil over medium heat.
  • Add diced chicken, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
  • In a small bowl, mix mayonnaise and sriracha to create the spicy drizzle.
  • In the last few minutes of cooking the chicken, add the mixed vegetables to the skillet and stir-fry until tender.

Serving

  • Serve the chicken and vegetables over jasmine rice, and drizzle with the spicy mayo.
