  • 2 cups rolled oats Can use certified gluten-free oats for gluten-free version.
  • 1 teaspoon cinnamon Can experiment with other spices like nutmeg or cardamom.
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup Can be replaced with agave or a sugar substitute.
  • 1 cup chocolate chips Feel free to adjust the amount for more or less sweetness.
  • ½ teaspoon salt

Preparation

  • Preheat your oven to 350°F and line a 9×9 baking pan with parchment paper.
  • In a large mixing bowl, combine all the ingredients, ensuring that everything is well mixed but not overworked.
  • Fold in the chocolate chips gently before transferring the mixture to the baking pan.

Baking

  • Flatten the mixture into a flat, even layer in the lined baking pan.
  • Bake for 18 to 20 minutes or until the edges are golden and the bars appear set.
  • Allow the bars to cool completely before cutting them into squares.

Notes

Store in an airtight container at room temperature for up to 4 days or refrigerate for up to a week. These bars freeze beautifully for up to three months.
