  • 3 pieces ripe bananas Ensure they are perfectly ripe for maximum sweetness.
  • ½ cup unsalted butter (or vegan butter) Use cold for the crumb topping.
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar Adds depth to sweetness.
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon ground cinnamon Enhances flavor.
  • 2 large eggs
  • 1 cup almond milk (or any preferred milk)

For the Crumb Topping

  • ½ cup unsalted butter (cold) Should be cut into cubes.
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon

Preparation

  • Preheat your oven to 350º F and grease a 9" x 13" baking dish.
  • In a bowl, combine cold butter cubes, flour, sugars, and cinnamon until crumbly; set aside.
  • Whisk together flour, baking powder, cinnamon, and salt in another bowl.
  • Cream softened butter and sugar in a stand mixer until light and fluffy.
  • Add eggs, vanilla, and mashed bananas until just combined.
  • Gradually mix in alternating dry ingredients and milk until just combined.

Assembly and Baking

  • Layer half of the batter in the prepared dish.
  • Sprinkle with some crumb mixture, then add remaining batter.
  • Top with remaining crumbs.
  • Bake for 50-55 minutes or until a toothpick comes out clean.
  • Cool before slicing and serving.

Notes
