  • 1/3 cup plain yogurt or sour cream At room temperature for added tenderness.
  • 2 cups mashed bananas (about 4 large ripe ones) For rich banana flavor.
  • 1 teaspoon pure vanilla extract For a hint of vanilla essence.

Optional Ingredients

  • 3/4 cup chopped pecans or walnuts For a bit of crunch in each bite.

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  • In a large bowl, mash the overripe bananas until smooth. Stir in the softened butter.
  • Mix in the baking soda and salt. Then, add the brown sugar, beaten eggs, and vanilla extract. Mix well.
  • Gradually incorporate the flour into the mixture, stirring until just combined. If using, fold in the nuts.

Baking

  • Pour the batter into the prepared loaf pan.
  • Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

For serving, a little butter, cream cheese, or honey can enhance the flavor. This banana bread stays fresh at room temperature for up to three days. It can also be frozen for longer storage.
