Preparation

  • Preheat the oven to 425°F (220°C).
  • Wash and cut the potatoes into wedges, aiming for uniform sizes.
  • In a large bowl, mix olive oil, minced garlic, salt, pepper, and paprika.
  • Toss potato wedges in the oil mixture until coated.
  • Spread wedges on a baking sheet in a single layer.

Cooking

  • Roast for 25-30 minutes, flipping halfway through.
  • Remove from oven and sprinkle with Parmesan cheese.
  • Return to oven for an additional 5 minutes until cheese is melted and bubbly.
  • Sprinkle with parsley, if desired, and serve hot.

Notes

Soak potato wedges in water for about 30 minutes before cooking for extra crispiness. Adjust spices and cheese to taste.
