  • 1 block Feta cheese High-quality feta recommended.
  • 3 large Eggs Use as many eggs as desired, typically 2-3 per serving.
  • 1 cup Cherry tomatoes Can be substituted with other vegetables.
  • 1 cup Fresh spinach Fresh spinach recommended.
  • 2 tablespoons Olive oil Do not skimp on the olive oil for richness.
  • to taste Salt Season generously.
  • to taste Pepper Season generously.
  • optional Fresh herbs (e.g., basil or parsley) For garnish if desired.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a baking dish, place the feta cheese in the center and surround it with cherry tomatoes and fresh spinach.
  • Drizzle olive oil over the ingredients and season with salt and pepper.
  • Make wells in the feta and tomatoes and crack the eggs into them.

Baking

  • Bake in the oven for 20-25 minutes, or until the eggs are set to your liking.
  • Remove from oven and garnish with fresh herbs if desired.
  • Serve warm with toast or as is.

Notes

Allow leftovers to cool completely before storing in an airtight container. Best consumed within two days.
