  • 8 large eggs

  • 1/2 cup diced vegetables (bell peppers, onions, spinach, etc.) Use a mix of your favorite vegetables
  • 1/2 cup cooked bacon or sausage (optional) Add for extra flavor if desired

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Cut the hoagie rolls in half lengthwise and hollow them out.
  • In a large bowl, whisk together the eggs, milk, salt, and pepper.
  • Stir in the shredded cheese, diced vegetables, and cooked bacon or sausage (if using).
  • Generously spoon the egg mixture into each hollowed-out bread half.
  • Arrange the filled egg boats on a baking sheet lined with parchment paper.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the bread is golden brown.
  • Remove from the oven and let cool slightly.
  • Garnish with fresh herbs and serve warm.

Notes
