  • 6 pieces bone-in skin-on chicken thighs (about 6 ounces each) Bone-in and skin-on ensure moisture retention.

Seasonings

  • 2 tablespoons olive oil For drizzling and flavor.
  • ½ teaspoon paprika Can substitute ¼ teaspoon each of sweet smoked paprika.
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt Adjust to taste.
  • ¼ teaspoon black pepper
  • ¼ teaspoon dried thyme leaves Can substitute dried rosemary or basil.

Preparation

  • Preheat the oven to 425°F. Line a rimmed baking pan with foil and place a baking rack on top.
  • Pat the chicken skin completely dry with a paper towel to remove moisture.
  • Drizzle the chicken thighs with olive oil and season generously with paprika, garlic powder, salt, pepper, and dried herbs. Rub the seasoning and oil into the chicken skin.

Baking

  • Place the chicken thighs on the rack, skin side up, and bake uncovered for 35–40 minutes or until the internal temperature reaches 165°F.
  • Turn the broiler on high and broil for 2–3 minutes to crisp the skin further if needed. Let rest for 5 minutes before serving.

Notes

For flavor enhancement, garnish with fresh herbs or a squeeze of lemon. Store leftovers in an airtight container in the refrigerator for up to 4 days.
